last year, my addiction was "Sherbet", which I still love and enjoy, but I have a new "addiction", this year: hot sauces of all kinds. From "mild" through "melt" varieties – there are thousands of them commercially and privately available – I enjoy using (many of) them, in and on almost every kind of food – except pancakes and donuts;
Capsaicin is what puts the heat or pungency in chilies. It is a compound that is insoluble in water, tasteless and odorless. It is made of seven closely-related alkaloid or capsaicinoids. Three of these components cause the "rapid bite" at the back of the palate and throat and two others cause the long, slow burn on the tongue. Capsaicin is produced and found in the placental partition ("white" cross wall and veins) of the pod. The seeds become pungent through contact with the placenta.
First, a bit of history of "The Scoville Scale". In 1912, Wilbur Lincoln Scoville (1865–1942) was an American pharmacist and is best known for his creation of "The Scoville Organoleptic Test", now standardized as "The Scoville Scale". He was then a chemist employee of The Parke-Davis Pharmaceutical Company, and developed a method to measure the "heat level" of chilies. The test is technically-called "The Scoville Organoleptic Test". In his original testing, Mr. Scoville blended various pure ground chilies with a sugar-water solution. A panel of testers then sipped the concoctions in increasingly diluted concentration, until they reached the point at which the solutions no longer burned the mouth. A number was then assigned to each variety of chile based on how much More hot sauce, please! My head's not sweating, yet. It isn't hot enough! it needed to be diluted before that "heat" was no longer tasted. This measurement of millions of drops of water-sugar solution is then translated into Scoville Heat Units (SHU) in multiples of 100. This technique is subjective and depends on the taster's palate and it's response to the pungent chemicals. The accuracy of this test is often criticized and modified versions have since been developed, as alternatives, but The Scoville Scale remains "The Standard Test", to this day.
The most accurate method for measuring pungency in chilies is a High Performance Liquid Chromatography (HPLC). In this procedure, the chile pods are dried, then ground-up to powder. Next, the chemicals responsible for the pungency are extracted, and the extract is injected into the HPLC device for analysis. This method is more costly than the Scoville Test or the simple Taste Test, but much more accurate. This method measures the total "heat" present as well as the individual capsaicinoids present.
The active ingredient in peppers – capsaicin – is measured on the often-dreaded and scary Scoville Scale, which is still a mystery to most people. I understand it, though. It's basically a "death chart" for the degree of ***hotness***, based upon the percentage of capsaicin contained in each pepper type, some of which can kill you. There are also good and bad health side-effects. As with anything: "everything in moderation", I've come to learn, over the years. Especially anything which can kill you, or at least remove paint. Heh.
The health benefits of capsaicin are many and quite varied. When I lost 85-lbs – going from a fat 247-lbs to a If I can't feel the sweat dripping from the top of my head, it's not hot enough, yet. I need more hot sauce, dammit! Gimme the "good stuff". I want to see my fork melt from it! more svelte 162-lbs, and now back up to a more reasonable and healthy 175/180-lbs – it was, as part of my diet, the capsaicin in Crystal® Hot Sauce, which helped me to lose weight. It's also helped me to lower my blood pressure, from 174/125 to 108/52. Nice, huh?
While mild-to-hot peppers and/or their respective sauces aren't for everyone – my Mom & Dad don't even use salt or pepper on their food – I have become a devoteé of the peppers and sauces, over the years, and now actively seek-out hotter and hotter sauces, within my "personal tolerance range", of course – "A man's got to know his limitations" – but I'm very careful not to exceed those "limits". If I can't feel the sweat dripping from the top of my head, it ain't hot enough, yet.

A Day In The Life
Up at 4am on Friday, I watered & fed Murphy, and went back to sleep until 5:30, after unthinkingly-eating some Del Monte® Red Grapefruit Sections; awww crap; that ruined my 10-14hrs of "fasting" for today's bloodwork at the lab! Now, I'd have to do it another day. Back-up at 5:30, I decided to make a large breakfast and go food shopping. I made Fresh-Squeezed OJ w/ lots of pulp, Eggs Benedict, Grits w/ Butter & Sea Salt, Hash Browns, Country Sausage, Rye Bread Toast w/ Keller's Butter and French-Roast, Turkish-Grind Coffee. PO'd at myself for breaking the "fast", I logged-on to the weather and news sites to see what was ahead.
Instead of just sitting around, I went to Weis Market in East York, in the pouring rain at 7am, filled my "list" and inadvertently left a 16-roll package of paper towels in the bottom of the empty shopping cart, after I'd loaded the Jeep's cargo bay with the other groceries. After getting back to the Condo and unpacking, I realized it, and had to drive back to Weis' parking lot, where I'd parked the cart in their "cart corral", and sure enough it was still underneath the shopping cart, covered with rain, but undamaged since it was sealed. Dumbass me. I spent the rest of the morning re-organizing my Food/Water Survival Stockpile in the basement, with additions and rotated stock. My Ammo Stockpile is okay as is, for many, many years. As is my Cannon® Double-Door T-65® GunSafe.
I most likely wouldn't be going to "The Cabin" this weekend, as I had my Friday 8pm Church Meeting to attend, and Lord, Grant me the Serenity to accept the things I cannot change; the Courage to change the things I can; and the Wisdom to know the difference. called William-the-caretaker, to take charge of "The Cabin" & Jenny, for the weekend. I had other more important matters to attend to, here in York. I helped my realtor, Terry, get ready for an MS-PowerPoint presentation to the Church, the potential buyer for my 20-acre Complex, on Saturday. Though he's doing 95% of the PP-presentation, I supplied him with both electronic picture files and framed aerial pictures of the site. Back from the Church Meeting at 9:30pm, I watered & fed Murphy one last time for the night, and called it a day. I really wanted to leave for The Cabin, but I was just too tired. Tomorrow was another day.
I was up at 4:30am on Saturday, and decided to stay-in and work on transposing more Chapters of "The Virtual Cabin". I got 8 done, and have only 1 left for 2011 and 2 in 2012, to finish transposing, rename some pages for the Server, transfer 50-100 pictures from my Condo's HD to the server, "review all Chapters for continuity and length" and do a "final edit" on each, and then it goes "live". I should be done with it all on Monday or Tuesday, and will send the "Live URL" out to everyone on my numerous mailing lists. After a quick breakfast of Fresh-Squeezed OJ w/ lots of pulp, Quaker Oats® Peaches & Cream Oatmeal, English Muffins, a Bananna and 5-6 mugs of French-Roast, Turkish-Grind Coffee, I worked until 2pm on "The Virtual Cabin", and then took a "short 3½-hour nap" on the LR couch. My system is still tired from the past week-and-a-half of 1,000mg/day of Tetracycline, now-reduced to 500mg/day for a one week dosage, to be reduced further to 250mg/day beginning next Friday, for one more week, and then off-of-the-stuff. I've dropped 13-lbs. It's done/doing the job, by breaking-up my lung congestion ("furballs"), but has left me "wrung-out and tired", from the notable, prolonged-usage, side-effects.
I listened to a couple of last week's "Mark Levin Show Rewinds" until around 8:30pm, and shut-down the computer and Condo. It was time for some serious sleep, Sunday morning food shopping and a visit to Mom & Dad's, before returning to work on "The Virtual Cabin", and preparing for the upcoming week. Murphy agreed.
I had one of the worst nights I can remember, in a long time: unable to sleep for any length of time, weird dreams, up 5-6x for a smoke/drink of water, thinking about what a socialist/fascist mess this country's in right now, the coming economic and social upheaval, a million other things about my own immediate past Business failure and very uncertain personal future, the physical withdrawal from massive I have seen things, few people would believe – a young mother cat suckling her newborn kittens, violent tornadoes & hurricanes up-close and personal, whole hummingbird families in their tiny nests, Spring grass blades poking through a fresh "onion snow", active volcanoes on Hawaii, a Space Shuttle launch which exploded on take-off – all those moments will be lost in time, like tears in the rain, when I die. Tetracycline dosages, and finally, up for the day, at 3:30am. I was dead-tired. Maybe the "3½-hour nap" the previous afternoon had something to do with it; I don't know. I felt like crap. Some cold water on my face helped a little. So did some breakfast and coffee. I had some quick food shopping to do, drive down to the GC&N Complex and p/u Fri-Sat mail, visit Mom & Dad, pay bills, work on a whole "list of stuff". Get my mind into another direction; stay focused on "something", for a change, instead to trying to do too much.
After picking-up my Condo's weekly mail, I went to Weis Market, then down to the Complex to get the mail, picked-up various garbage items – whiskey bottles, beer cans, paper etc – along my property's Rt24 frontage which some lowlife assholes had thrown-out of their trucks and cars, to the local DIY Car wash to clean the Jeep, back to the Condo to unpack, and finally to M&D's for a visit, around 10am. I brought home a box full of "old GC&N files" from 1989-'90-'91", to add-in to my ongoing MS-Works v9 Spreadsheet on "Original Construction Costs".
I spent the rest of the day and evening working on finishing-up the transposition of all of "The Virtual Cabin" Chapters from "Journal" entries to their own individual CSS-xHTML/HTML documents, and re-read/corrected/edited all 77 Chapters-to-date, but went back to my original "Virtual Cabin Novella List" text file, and noticed that *9* of them, from mid-2010 (my heavy drinking nights), were woefully-incomplete and very short. They needed "fleshing-out", copy added-to and re-edited. That would take another few days, taking me beyond "my personal set deadline" for finishing this massive project. All of the "loose" and pertinent, necessary pictures have now been moved to the FTP Upload Folder on my HD, ready for transfer to the Domain Server Folder, with the Chapters, Introduction and Table of Contents (TOC) Pages. The PhotoCredits Page will take another week or two to complete, and be added later, after the Site "goes live". That PhotoCredits going to be a huge, but very necessary job, and I have the HTML page already built and will begin the job soon. I called it quits at 9pm.
I "slept-in" until 4:30am on Monday – had a much better night than Sat-Sun's fitful sleeplessness – turned-up the Condo's heat to 78°F, watered & fed Murphy, made Fresh-Squeezed OJ w/ lots of pulp, Quaker Oats® Raisin & Spice Oatmeal, Rye Bread Toast w/ Keller's Butter, French-Roast, Turkish-Grind Coffee and grabbed a Bananna for my trip to Stewartstown (PA), later this morning. I checked the weather and news sites, to see what's ahead, and it looks like Winter isn't coming anytime soon, based upon NWS' Long-Range Forecasts.
Today, I began taking the "final routine of 250mg/day dosages" of Tetracycline – this is my final week, down from 1,000mg/day & 500mg/day of the previous 2 weeks, and then I'm off this stuff If you live long enough, you have regrets, and the ones that "nag" at you the most, are the ones where you knew you had a choice. The very same ones where you knew you could have stopped yourself; the very same ones where you looked into a mirror, and everything good inside yourself said, "Don't do this". – but still taking my 4 BP meds, 2 Vitamin D3s (5,000 IU), 1 Fish Oil Gel-Cap (1,200mg) and 1 325mg aspirin, every morning. I'm feeling much better after last night's sleep, and breathing much easier with all that fluid out of my lungs. I almost "feel like myself", again, whatever that means. Heh. I had my "to-do list" for the day done, did a load of dishes and re-checked the weather and new sites. After getting those numerous listed errands done, I was ready to come back and get to the formidable chore of re-editing/re-writing those (so far) 9 "Virtual Cabin" Chapters from 2010 – I'm at Chapter 32 of the 77 Chapters needing proofing and possible editing – and getting "a little closer" to taking the website "live", finally. I realized that it wasn't going to happen this week; perhaps over the weekend, if I was lucky. As I write a new one for each week's "Journal", I'll add it to the Site, TOC (Table of Contents) and PhotoCredits Pages (if applicable), on the Domain Server, which also houses both "www.gdnctr.com" and "John Shelley's Journal". Maintaining 3 Domains is a lot of work, although www.gdnctr.com is now defunct and doesn't require much "maintenance", anymore. I really enjoyed working on it everyday, when it was "alive & active", though. Oh well; it is what it is.
I listened to the "Mark Levin Show", 6-9pm EST, streaming live (click on "Listen Live") from his website, with more links here, while planning-out Tuesday's "to-do list". I had to go to Fishel Automotive, in Red Lion (PA) to pick-up a $900 refund check for the Jeep's "engine core exchange", which actually wasn't damaged a few weeks ago when the engine blew-up, then right across Rt 24 to PNC Bank to open a savings account for my Condo's 22-year old roof & 4 skylight replacement in April, and meet with the Choice Security Rep, who rescheduled from last Friday, to sign the upgraded Condo Security equipment installation/24x7 monitoring Contract. He's giving me a "$200 credit" for the relatively-new GC&N hardware, which he's personally-buying from me, for his home. Works for me. A lot of running around, plus other minor errands. I called it a day around 9:15pm.
Murphy had me up at 5am on Tuesday, after a "semi-peaceful" night of sleep – much better than last night, but not as good as many others – so I took care of his watering & food
Screw it. I decided to work on the PhotoCredits Page, for "The Virtual Cabin"; a more monumental job than I'd anticipated. When I write each Chapter in my weekly "John's Journal", I use a "cheat sheet", developed early-on and added-to each week, which I call the "Cabin Players Cast" Page – listing everything there is to know about the fictional "Adam's Junction, PA" facts & history, all of its fictional characters, HTML, CSS-xHTML, photo descriptions by category (weapons/gear/ammo, foods, condo, cabin, buildings, quotes, my Business, Mom & Dad, pets, police gear, dreams, Rx drugs, books, computers, DVDs etc) photo URLs, various websites, – rather than try to "remember" all of those many thousands of "People, Places and Things". My head would explode if I tried retaining that much data. After toiling for 3½ hours, I was only 20-25% through the PhotoCredits Page. I listened to the "Mark Levin Show", live-streaming in the background, from 6-9pm EST.
My Friend, Lee, came over at 9:15pm to talk and watch FX-CATV's Season Three's 3rd Episode of "Justified", from 10-11pm, which I normally record (watch a few short clips here). It was another "stem-winder", as usual. It repeats from 11pm-12midnight. I finally got to sleep at 11:30pm.
Up on Wednesday at 6am, I took care of Murphy's water and food needs, made breakfast and coffee, and set-out to Weis Market to get cat food and litter, and then to PNC Bank to deposit my first (and probably last) 2012 GC&N paycheck, for all the work I've been doing. It was a "balmy 53°F" and rain was predicted – once again highly-unusual for this time of the year – but hadn't yet arrived. I decided to drive to the GC&N Complex and pick-up Monday's and Tuesday's mail, and found a new Subaru Forester parked in my driveway, with a hunter illegally on my property – Posted: "NO TRESPASSING" – and called the Chief of North Hopewell Twp Police to meet me at the entrance. I finally found the hunter, with a .410ga shotgun, "hunting rabbits", and asked him to leave, due to liability for me and that he'd clearly-violated the law without the proper permission and insurance/PA Fish & Game Commission forms. He apologized, left and promised not to come back without my prior permission and proof of insurance. That done, I got home by 11:15am, and unpacked Murphy's numerous food litter purchases from the Jeep. Linda soon called and asked if I could come into York, with my 6ft step-ladder and help her and Sherry with Sherry's "new boutique store prep", next to the downtown York's Historic Central Market. I'll do anything *except painting* – the fumes make me violently-ill; but that's another story, for another time – so I gladly went and helped-out where I could. I had some fun with getting-out and doing something "constructive" for someone else, for a change. I just didn't feel like stying inside on a Spring-like, 60°F day and working on "The Virtual Cabin", or anything else. My two baseball caps from Chili-Head Gear arrived UPS, just before I got home at 4pm.
I again listened to the "Mark Levin Show", live-streaming from his site, with even more links, here. Levin, ESQ, is easily the most erudite, intellectual and distinguished Talk Radio Host – no one else even comes close – with an advanced degree in Jurisprudence (Constitutional Theory & Philosophy of Law). His show is both thought-provoking and stimulating, though he can be "gruff and abrupt" to the idiotic and moronic callers, which I wholeheartedly endorse; they need a verbal beating, IMO. I called it a day at 9pm, having made-up my "list" for tomorrow. Murphy was way ahead of me, and already waiting on the bed.
I got up at 5am on Thursday, turned-up the heat to 78°F – though it was a relatively "balmy" 34°F outside – watered & fed Murphy, had some Del Monte® Red Grapefruit Sections, Cream of Wheat, Sunnyside-up Eggs, Bacon, Hash Browns/Fries and 3 mugs of French-Roast, Turkish-Grind Coffee for breakfast and logged-on to check the weather and news sites. I like the fact that I'm now gradually getting out of the "3-4am waking-up habit", after 21+ years, and beginning to sleep a little later. I'd like to be able to sleep until 6:30-7am; perhaps that'll come in time, as my "body clock" is still so finely-attuned to the earlier awakening times, as it has been for so long. Habits like that aren't so easy to change, all-at-once. It takes time and some patience, I've (finally) learned.
Several dozen "Journal" Readers have asked how I went from 247-lbs to 162-lbs, and am now back-up to 175-180-lbs, and staying there, quite comfortably. The old saying, "Breakfast: eat like a king; Lunch: eat like a prince; Dinner: eat like a pauper", applies. Everything you eat after 4pm or later, TURNS TO FAT OVERNIGHT. Its calories/fat don't get burned-up by your body, so I limit my intake severely in the afternoon, after say, 2-3pm, to Ocean-Spray® Diet Fruit Juices and the occasional Lance® Peanut Butter & Cheese Crackers; nothing else. No huge plates of pasta, candy, beer, liquor, sugary foods etc. Everything "in moderation". It's called *self-discipline*, and it works. The extra, fatty pounds just come-off like crazy; back, knee and hip problems vanish and you can see your feet again! Simple stuff.
Uh-oh, Taco Bell's got a "Salmonella Enteritidis problem"? Crap, I just had several Double Hardshell Taco Supremes, from the local place here in East York, and I feel fine. Must not be a "problem" (yet) in this area. Or maybe all the "extra-hot sauce" I used on each, is killing the "germs"? I think I'll try the nearby, local Chipotle Mexican Grill, next time.
6 more weeks of Winter? What Winter? Why hasn't someone shot this frigging groundhog, yet? If I could get the shot, I'd take it! And while I'm at it; this one, too, dammit. Mmmmmm, "Cajun Brunswick Stew".
I spent the afternoon going through "old" GC&N File Boxes, re-sorting, re-organizing them, working on the 1989-90 GC&N Construction Costs Spreadsheet, doing Condo chores, going to a meeting with a new realtor and talking to the people from Slide-Fire Co, whose product will do this for my Class III, now semi-auto AR-15s, and their local FFL retailer in Elizabethtown. I'll be taking several up there next week to get them fitted with the new pieces at around $375 esch. A bargain, IMO. I'll also need to get a couple more of these 100-round Beta Drum Mags; I only have one, now, plus lots of 40-round mags, but on full-auto, 40 rounds will go very, very quickly.
After watering & feeding Murphy, I made a very light, BLT Pasta Salad, had some Ocean Spray® Diet Blueberry-Pomegranate Juice, and listened to the "Mark Levin Show" just from 6-8pm, with more live-streaming links, here. I had a busy day ahead tomorrow, made-up my "to-do list", and decided to shut everything down by 8:15pm, and get some sleep. I knew that Murphy wouldn't mind at all. So after FTP-ing this week's "Journal" up to the Server, I called it a day.

Mr. Speaker, Mr. Vice President, Members of Congress, distinguished guests, fellow Americans and faithful subjects:
The State of the Union is much better thanks to my efforts over the past three years to improve your poor wretched lives — efforts unparalleled since Abraham Lincoln, Lyndon Johnson, and maybe Martin Van Buren — to restore our nation's economic health. Those efforts have been highly successful, no matter what you think. Or feel or see or know.
Thanks to our federal government's having invented the fracking process to extract natural gas from shale formations, much the way Al Gore invented the Internet, we are making dramatic progress in solving the Energy Crisis and generally repairing the damage done to the middle class by the previous administration. (Middle Class: a general term for everyone in the sound of my voice who can vote.) Rest assured: If anything's wrong with this country, it's George W. Bush's fault. But I must be honest: It wasn't all his fault. Some of it was Dick Cheney's.
But now, every day in every way, we're getting better and better thanks to my brilliant leadership. My fellow Americans, you can take my word for it. Who are you going to believe, me or those lying unemployment figures? You can feel the progress. Just look around you, but not too closely. I told you we would keep joblessness below 8 percent, and I only missed it by a percentage point or two. Why quibble? Besides, I killed Osama bin Laden.
I say we can restore an economy where everyone gets a fair shot, everyone does their fair share, and everyone plays by the same set of rules, except maybe Solyndra and a few other companies, banks and investment houses too big to fail, or that have political connections with my campaign, or that have had the foresight to become Government Sponsored Enterprises.
We are fast approaching that messianic time when the oceans begin to recede, the planet to heal, and payroll taxes are put off again. Deficits? What's a few more millions/billions/trillions between friends? Pay no attention to that national debt behind the curtain. Just remember that I killed Osama bin Laden.
My fellow Americans, if Congress will just get off its duff and spend more there'll be pie in the sky and enough for everybody who votes right. This I believe: American business and industry can compete with anyone in the world if those fat cats will just pay more taxes, stop exploiting the masses, and generally follow my orders. Look at Mitt Romney's tax return, if you can lift it, and notice all the tax breaks he gets just for investing in the American economy. I say to American business tonight: I'm from the federal government and I'm here to help you. I killed Osama bin Laden, didn't I?
My overseas contingency operations are completely unlike George W. Bush's war on terror despite a certain superficial resemblance in goals, methods, successes and everything else. Mainly because the name is different, and because these wars — I mean military operations — are mine.
Just as I vowed, we are going to close down the stockade at Guantanamo and refrain from trying war criminals in military courts. Just as soon as it's not too dangerous and impractical. Maybe by the next decade, or the next century, or whenever we're no longer threatened by terrorists. Eric Holder at Justice will tell us when it's safe.
As not only president of the United States but governor of each of these states, I will see to it that we outlaw drop-outs and keep those little suckers in school till they graduate and become the colleges' problem. Our universities don't have to teach near enough remedial courses as it is. And I killed Osama bin Laden.
My fellow Americans, we all know Washington is dysfunctional, and I want to assure you I have nothing to do with it. I don't even live in this town, I just drop by now and then.
I can't emphasize this too much: I have nothing to do with Washington's petty, partisan politics. Only those obstructionist Republicans in the House are responsible for all this gridlock. My roots are out in the country, on the campaign trial.
Now to sum up foreign affairs in 100 words or less: I want to assure all those brave, freedom-loving heroes who launched the Arab Spring that we shall never desert you in your hour of victory and until then will exercise the greatest discretion. We will also prevent those madmen in Iran from developing a nuclear weapon until the very moment they have one.
